
 4  organic free range eggs
 3  large ripe bananas
 ¼ cup coconut oil
 1 tsp ground cinnamon
 1 tbsp raw honey
 ½ cup coconut milk
 ½ tsp salt
 ¼ tsp baking soda
 1 tsp vanilla bean paste
 ½ cup coconut flour
 ¼ cup almond meal
 handful walnuts

Combine dry ingredients in a bowl. Blend wet ingredients and mix well with dry ingredients. The coconut flour absorbs liquids rapidly so work quickly.

Pour into a greased loaf tin and bake at 170 degrees for about 45 minutes. Use a skewer to check that it is set. Turn oven down and cook slower if necessary.
