SMOKEY PAPRIKA WEDGES

 6 potatoes, peeled and sliced into wedges (or as many as you need)
 Extra virgin olive oil
 Good quality smokey paprika powder

Par boil the wedges in a saucepan of boiling water until almost tender. Meanwhile preheat your oven to 200c, placing the oven tray in the oven to preheat also.

Drain potatoes well. Coat well with a generous amount of olive oil and paprika. Transfer in one layer to the hot oven tray- you should already hear a nice sizzle. Place in the oven and cook until crunchy, tossing once or twice as needed.
