LEFT OVERS KID FRIENDLY PASTA

Yields1 Serving

 4 chicken thighs, or chicken, turkey or beef mince – what ever you have left!
 1 onion
 2-3 cloves garlic
 1-2 cups left over veg that needs using up- mushrooms, carrot, pumpkin, tomatoes, broccoli, kale etc work well
 Dried italian herb mix, to taste- or fresh if you have some on hand
 1 bottle Tomato Passata- save the bottle for green smoothies!
 Splash red or white wine, optional if you have an open bottle on hand ;)
 Seasoning to taste
 A splash of raw honey or maple brings out the sweetness of the tomato
 Rice Pasta (available in Coles and Woolworths, much healthier than wheat pasta and easier to digest)
 Parmesan Cheese

Throw the chicken thighs, onion, garlic and veg into a food processor and pulse to a fine mince consistency.

Heat a pan with a splash of olive oil. Fry the mince mix until brown. Add wine and passata and simmer until thick and fragrant- have a cup of tea while this is happening, or catch up on the exercise you promised yourself you would do and do a few squats and ab crunches ;)

Cook pasta

Serve with parmesan cheese

I recommend making double and layering the pasta, sauce and cheese in an oven dish for the following night. Simply bake until warm and golden. Now thats wholesome FAST FOOD!
